Tuna Salad Nicoise



Makes 6 cups of salad preparation time 20 minutes
2 cans of Albacore Tuna in water
3 roma tomatoes sliced or quartered
½ red onion sliced
6 cut into quarters and par boiled new red potatoes
3 eggs boiled
One small jar artichokes sliced
One small jar Greek olives or black olives
½ pound green beans trimmed and blanched
One head of Red leaf lettuce washed dried and cut into pieces
1/3 cup olive oil
¼ cup lemon juice
Salt/pepper to taste
2 tablespoons Dijon mustard

In a large pot of boiling water add the new potatoes, greens beans and eggs all together. Place a large pot or bowl in the sink with ice and water, take the greens beans out of the boiling water in 4 minutes, place in ice water. Take the eggs and potatoes out of the boiling water and rinse in the sink; don’t put in the ice water; just the green beans. Let the potatoes and eggs cool and set aside. Drain the albacore tuna and set aside. In a large bowl or platter place the torn or chopped lettuce on the bottom and start layering the ingredients. First flake the tuna and place on top. Drain the water from the bowl of ice water with the green beans and put the cooled potatoes in there with the sliced onions. Whisk the olive oil, lemon juice, Dijon mustard, salt, pepper together and toss the potatoes, green beans, onions, olives, and artichokes together and let sit. Take the egg shells of eggs and slice; set them aside. Now place the mixture on top of the tuna platter and place the eggs on top arrange nicely, you are ready to eat now! Yummy!!
